Three easy meals from a tin of cooked chickpeas

A tin of cooked chickpeas can become several distinct meals. Decide first whether you want them cool and crisp, warm with vegetables, or lightly mashed on toast. The ideas below use ordinary ingredients rather than a long shopping list.

Scale the amounts to the number of people and the size of your tin. Check its label if the packing liquid matters to you. Drain the chickpeas, and rinse if you prefer a more neutral taste. Different brands and vegetables will change the finished flavour.

1. A salad with something crisp

Combine drained chickpeas with chopped cucumber, tomato and onion. Add olive oil and a squeeze of lemon just before eating. If the tomatoes are especially juicy, stir them in at the end so the salad does not become watery. Fresh herbs are pleasant when you have them, but you do not need to buy an entire bunch for this bowl.

For a packed lunch, use a clean container, keep it chilled and dress it when you eat. USDA guidance on leftovers says perishable prepared food should be refrigerated within two hours; hotter conditions shorten that window.

2. A warm pan of chickpeas and vegetables

Warm a little oil in a pan. Start with an ingredient that takes longer, such as pepper or onion. Add a handful of spinach and the drained chickpeas later, stirring until everything is hot. Finish with lemon or spices you already use. If the vegetables need longer but the pan is drying out, add a splash of water.

Taste before adding salt; the tin and any seasoning may already contribute enough. Serve with bread or previously cooked rice, following the storage guidance for the accompanying food too.

3. Roughly mashed chickpeas on toast

Mash a portion with a fork and stir in a little olive oil and lemon until spreadable. Spoon it onto toasted bread and top with tomato or a few leaves if you have them. A blender is unnecessary for this rustic version. Leaving some whole chickpeas gives it more texture.

Store the remainder thoughtfully

Can I use the liquid in the tin?
